The project demonstrates how technological innovation, visibility of operational and energy data , and process optimisation can translate into improved operational efficiency, sustainability, and competitiveness.
A complex energy environment
The Emmi Dessert plant featured a complex, energy-intensive ecosystem characterized by:
- Two trigeneration plants with a capacity of 430 kW
- A ground-mounted photovoltaic system of 373 kW
- Around 50 metering points distributed across electricity, gas, water, and compressed air
- Monitoring coverage of approximately 80% of total consumption
Despite the presence of advanced infrastructure, energy management was poorly integrated and heavily manual. Several critical issues limited the site's ability to realise the full benefits of its energy infrastructure
A significant share of the heat produced by the trigeneration units—around 40%—was not recovered or utilized, while steam consumption continued even during non-production hours. At the same time, several assets such as compressors and packaging lines often continued operating when not required , generating further energy waste.
In this context, energy management was mainly reactive, focused on identifying issues after they occurred rather than enabling preventive monitoring and optimization. The opportunity to access incentives under the Transition 5.0 Plan further increased the need for improved control, measurement, and performance optimization.
The strength of the partnership: technology, data, and shared vision
The collaboration between Tesi and Emmi Dessert enabled an integrated approach to energy management, combining specialized expertise, analytical capabilities, and advanced technologies.
The project involved expanding the sensor network and implementing a multi-vector monitoring system capable of correlating electrical, thermal, and steam consumption, providing a complete view of plant energy performance.
Through the integration of machine learning algorithms, centralized dashboards, and advanced reporting tools, it became possible to identify inefficiencies, monitor custom KPIs, and support faster and more informed operational decisions. At the same time, the introduction of intelligent automation logic optimised the behaviour of production assets by dynamically managing start-up, shutdown, and operational settings.
The result was far more than a technological project: it established a data-driven operating model capable of making energy management more predictive, efficient, and sustainable, turning data into a concrete tool for continuous improvement.
Concrete and measurable results
The effectiveness of the project is clearly demonstrated by the results achieved in practice. Thanks to advanced monitoring, intelligent automation, and continuous process optimization, Emmi Dessert achieved a 6.83% reduction in overall energy consumption, transforming collected data into high-impact corrective actions.
Key contributing interventions included heat recovery from cogeneration systems, optimization of the ammonia (NH₃) chiller, automated management of non-productive assets, and optimisation of auxiliary systems during idle periods. Particularly significant was the optimization of pasteurization and CIP processes, which eliminated unnecessary steam consumption during weekends.
These results show how a data-driven energy management approach does not merely identify inefficiencies, but enables concrete and measurable improvements, delivering direct benefits in operational efficiency, sustainability, and industrial competitiveness.
